Distiller Undisclosed - 2X0 Gem of Kentucky Kentucky, USA NOSE: Vanilla, caramel, oak, spice; sometimes marshmallow, chocolate, or cinnamon. PALATE: Chocolate, cinnamon, dark red fruits, nutmeg, baking spices, toffee, oak, black pepper / rye spice. FINISH: Long, with oak, spice, caramel notes; black pepper, rye heat, toasted oak. AWARDS: The Gem of Kentucky release is new, relatively limited, and part of 2XO’s single barrel program, which may mean its award history is still developing. NOTES: Often described as viscous, rich, with depth and “weight” due to the double-barreling process. 2XO’s process involves double barreling — barrels of high-rye bourbon (35% rye mash bill) are hand-selected and then re-barreled into new charred oak for an extra period before bottling. It’s noted that 2XO sources bourbon from two separate Kentucky distilleries for blending.

PALATE: Bold rye spice from the 95% rye mash bill (per the press release) with dominant notes of pine and cedar, balanced by mint and the sweetness from the double-oak finishing (charred white oak) leading into caramel and toasted vanilla. FINISH: Long and layered, with warming spice, fresh-cut wood (cedar/pine), sweet oak notes trailing into a slightly smoky close. NOTES: The “double-oak” or “two times oak” (2XO) process is key: the extra oak exposure builds sweetness to balance out the rye spice. 95% rye mash bill; “Two Times Oak” (double oak) finishing (additional charred American white oak added to straight rye barrels) to build sweetness and complexity.
